Hydrogenated Starch Hydrolysates (HSH) are hydrogenated glucose syrups, which contain varying distributions of sorbitol, maltitol, and higher molecular weight polymers. Syrups containing a minimum of 50% maltitol are referred to as Maltitol syrup or Maltitol solution, while HSH generally refers to syrups containing less than 50% maltitol. End uses include caramel, chewing gum, cream centers, flavor carrier (processing aids), fudge, hard candy, health bars, soft and grained confections, taffy and toffee. Hydrogenated Starch Hydrolysates can withstand high temperatures without browning. Most oral bacteria cannot metabolize them so they do not promote tooth decay. |
